1/4 cup chopped fresh coriander leaves
1/4 cup chopped mint leaves
Optional: few drops of kewra or rose water
Step-by-Step Chicken Biryani Preparetion:
Step 1:
Marinate the Chicken
Take a large mixing bowl and mix all the marinade ingredients and spices with the chicken. Make sure each piece is well-coated. Once well coated, marinate, covered, in the refrigerator for at least 2 to 2.5 hours, or preferably overnight. The longer it marinates, the tastier and more flavorful it will be.

Step 2:
Cook the Rice Until 70% Done
Bring water to a boil in a large, heavy pot or bowl. Season with salt, oil, then all the spices. After the rice has been soaked, add it to the boiling water. Cook until the rice grains are 70% cooked. To check if the rice is 70% cooked, lightly cut or eat the rice with a spoon. After checking, remove it immediately and set it aside.

Step 3:
Cook the Marinated Chicken
Heat 2 to 2.5 tablespoons of ghee in a thick bowl or pot. Add the marinated chicken to the hot ghee and cook on medium heat for 7 to 8 minutes. Then reduce the heat, cover, and let it simmer for 20-16 minutes. Cook until the chicken is fully cooked.

Step 4:
Layer the Biryani
Now comes the most important and essential part – the layering.
First spread half the rice over the chicken.
Then add half the rice, mint, coriander, saffron milk, and fried onions.
Then repeat with the remaining rice and garnishes.
Pour 2 tablespoons of ghee on top of the rice and ,add a few drops of keora or rose water.

Step 5:
Dum Cooking (Steaming)
Take a pressure cooker to steam and add the rice to it and close the lid tightly. Then cook on low heat for 30 minutes. And if you want, you can place a griddle under the pot. And let it steam. This technique ensures that the flavors blend without burning the bottom.
